Courtesy of Brian Patterson Active time: 15 minutes Total time: 30 minutes Serves 6-7 (small portions) INGREDIENTS ¼ pound sliced bacon, crosscut into thin strips 1 large onion, chopped 3 large baking potatoes*** (about 2¾ – 3 lb), peeled and cut into 1 inch cubes 1 cup cubed butternut squash 4½ cups water 1 tsp salt 6 ounces cheddar cheese grated (about 1½ cups) ¼ cup chopped chives or scallion tops ¼ cup cream, optional DIRECTIONS Cook bacon over moderate heat until crisp. Remove bacon with a slotted spoon and drain on a paper towel. Pour off all but 2 Tbs. bacon fat or add oil to total about 2 Tbs. in the pan. Add onion and cook, over moderately low heat, stirring occasionally, until translucent, approximately 5 min. Stir in the potatoes, squash, water and salt bring to a boil. Reduce heat and simmer, covered, stirring occasionally, until tender.…

Courtesy of Brian Patterson INGREDIENTS 3 tablespoons firmly packed dark brown sugar 2 tablespoons Dijon mustard ¾ teaspoon salt 2/3 cup blanched slivered almonds 2 tablespoons butter 1 tablespoon vegetable oil 1 lb carrots, peeled and sliced thinly on diagonal 2 large stalks celery – sliced thinly on diagonal 2 cloves garlic – chopped finely 1 tablespoon finely chopped fresh parsley DIRECTIONS Combine sugar, mustard and salt – set aside. Saute almonds in butter and oil until golden. Add carrots and saute over medium heat until barely tender – about  4 minutes. Add celery and garlic and saute until vegetables are just tender – about 2 minutes. Stir in mustard mixture and continue cooking, stirring constantly until carrots are glazed – about 1 minute. Stir in parsley. serves 6 NOTES: Recipe easily doubled

The following is a very touching letter the club received from the mother of Francesco Rizzuto, 2012 winner of the Summer Kids Series T-Shirt design contest. She regularly participates in our Kids Series and was recently honored for her work at school. She wanted to share with her classmates how much she enjoys our youth runs. Lehigh Valley Road Runners donated some left over t-shirts from last summer to her class. Thanks to her mother, Holly, getting in touch with us. Allentown, PA – February 23, 2012 – Thanks to the dedicated support and partnership of the Lehigh Valley Road Runners (LVRR), HCM Foundation has successfully launched its 2012 fundraising campaign. Courtesy of LVRR Race Directors Chris Garges and Carly Patterson, HCM Foundation was named charity race partner, receiving 10 entries into the 11th annual LVRR Superbowl 10k race, held in the Lehigh Valley Parkway on Sunday, February 6, 2012. Although the charity entry racers were only asked to raise $125 each, the 10 racers instead raised a powerful $3,000 for HCM Foundation. The Superbowl 10k had 489 finishers, ranging in age from 11 to 66. Information and event photos can be found on the LVRR’s website: https://lvrr.org. The Lehigh Valley Road Runners Kids Running Series has had record numbers this year.  We are happy to report over 400 kids participated at the first 4 events.  The winner of the t-shirt design contest was Christopher Chambliss, age 8.  The winner of the slogan contest was Hope Green, age 6.  There were 15 entries for the t-shirt design contest and 20 entries for the slogan contest. Congratulations to this year’s scholarship recipients from the Lehigh Valley Road Runners. Six high school students received scholarship money from three separate scholarship funds at the club’s Summer Series 5k race last evening in Lehigh Parkway. The 2011 Ed Thompson Memorial Scholarship recipient is Patrick Mctish. Patrick received a $2000 check to be used toward his college education. Patrick will be attending Villanova University and majoring in Civil Engineering. The 2011 Nicole Reinhart Memorial Scholarship recipient is Amanda Thoet. Amanda will be attending Ohio Wesleyan University Honors college, College of Arts and Science.
